Better Than "Edible"

Each of my children has one vegetable that they hate. It doesn't matter how I fix it, my son eschews yellow (summer) squash and my daughter chokes her way through asparagus.

However, I love both vegetables so I keep trying new recipes to see if they'll overcome this aversion. (At this point I think it's habit more than taste so too bad. If they eat here, they eat what's served).

This is NOT the best time of year for asparagus, but hubs brought some home one day last week. I went in search of a recipe that would overcome the "not the best time of the year" reservation.  I found this, and the label given by my son was "better than edible. I liked it."  Of course, if it had been yellow squash he would have been calling Child Protective Services accusing me of trying to poison him.

Baked Asparagus w/Balsamic Butter Sauce

1 bunch fresh asparagus, trimmed
cooking spray
salt & pepper to taste
2 T butter
1 t soy sauce
1 T balsamic vinegar

1. Preheat oven to 400.

2.  Arrange the asparagus on a baking sheet. Coat with cooking spray and season with salt and pepper.

3.  Bake asparagus 12 minutes in the preheated oven, or until tender.

4.  Melt the butter in a saucepan over medium heat -- let it brown a bit.  Remove from heat, stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.

That sounds yummy! I have two veggies I avoid - cabbage & carrots. When I was a kid we often had cole slaw as our "green" veggie - and I had to have at least one bite or I wouldn't get dessert. Blech! The different with your kids though is that I will eat those veggies if they're prepared in ways I can tolerate - like an egg roll LOL. Cooked carrots mixed with other stuff are ok too.

LOL...no response from the daughter on this? You know me and cooking but when I do asparagus I soak 'em in that oil and vinegar salad dressing (I don't know the brand name or what it's exactly called but I know what it looks like at the store LOL) and put them on the BBQ. Too bad I can't do everything on the grill LOL

That recipe works ALSO well for Brussels Sprouts that are no longer prime! Amoeba declared them delicious and he doesn't like Brussels Sprouts.

I love most vegetables. The two I steer clear of are black eyed peas and okra.

LOL! The vegetables I realise I don't like are caulifower and turnips. One is too bland while the other tastes to me of cleaning chemicals LOL! So I can empathise with your children HAPPY CHRISTMAS :O)

W do asparagus simple. Olive oil, salt, pepper. Mix it all up so the asparagus is coated evenly. Grill on the bbq or even pan saute till the outside is a wee bit caramelized. Serve with a bit of butter.

I do want to try your version though. The balsamic vinegar would add a nice tang!

Sounds delicious. Not that either of my kids would touch asparagus with a ten foot pole...
